Slow cooking and smoking with
the Indirect Charcoal Box

STEP
1
Attach Charcoal Box to back of
Rib Pro. Close lid of grill. Open adjustable door on Charcoal
Box and fill with 5 lbs. of charcoal and light. Adjust dampers to
allow charcoal to become white.

2
After internal temperature of
grill reaches 400 degrees, put roast on stainless steel cooking tray (not
included) and place on grill grate. Close grill lid and adjust dampers
to bring temperature to 350 degrees. |

Every 30-45 minutes, add
charcoal to Charcoal Box to maintain consistent cooking temperature.
Don't let existing charcoal go down too much before adding fresh charcoal,
or temperature will vary. |

STEP
4
Place meat thermometer in
thickest portion of roast to check internal temperature. Do not leave
thermometer in roast unless it's ovenproof. |

STEP
5
When internal temperature
reaches desired doneness, remove from grill. Cover roast with foil for
20-30 minutes to secure juiciness and complete cooking.

6
Slice roast to desired
thickness. |

STEP 7
Add Au Jus if wanted and serve.
